First Day of Classes

Oh man, I am simply not the best morning person to ever walk the earth. Classes started today and I had an 8 am neuroscience class on Drugs and Behavior. At 8 am… Did I mention this class is at 8 am?! Who does that…? Haha. I’m not sure if I’ve mentioned it, but being a psychology major sometimes bites the big one. 😉 Also, neuroscience is kind of a big blur for me. I just sat in class today wondering what the heck he was talking about and all he was doing was a basic introduction. Then when I went to the reading for tonight, I might as well have been reading Russian. I just have no idea about all this complex circuitry business.

However, the one upside to being back is I can get back to my routine that I have missed so much. 🙂 I am so happy to be going to the gym today to get a hardcore sweat session started up. Also, super healthy eats are planned for today since my body is feeling a little less than stellar with all the indulgences from the past week along with being sick.

So to start out my morning I made a recipe from Dashing Dish. Her blog is awesome and I highly recommend that everyone checks it out. Not only does she have some awesome recipes, but she has a lot of really lovely and inspirational blog posts. This is what I ended up having this morning along with a side of Orange Juice since I’m still sick and apparently out of water haha. The oatmeal is super filling and I love the combination of nut butters with chocolate… As do most people, I assume. 😉 I normally top it with bananas, but since I’ve been gone for almost two weeks there is literally nothing in my cabinets… Till now! I went grocery shopping. I was starting to miss my salad beasts. I missed them so much they made an appearance today for my lunch. This salad beast contains low sodium turkey, spinach, bell peppers, corn, cucumbers, tomatoes, and carrots. The dressing was one of my favorites! Annie’s Lite Raspberry Vinaigrette. It’s delicious and you can actually pronounce all of the ingredients so there’s nothing funky in there. 🙂 I also had a light babybell cheese on the side. Yum yum!

So I went to the grocery store and loaded up my fridge with a ton of produce. Literally it took up the entire bottom of my cart. Doing this week right! 😉 Time to get out of my vacation indulgences. My body is already starting to feel better and it’s only lunch time. Also, I decided that I would be more apt to eat more vegetables in my diet if I prepped all my vegetables ahead of time. I cut up all my bell peppers and cucumbers and bought small packs of baby carrots! It’s going to be a good week!

Super Bowl

I’m not sure if I have ever mentioned my extreme love for the patriots. But I’m about to! We are going to the Super Bowl!!!! I have never been so emotionally invested in a game in my entire life haha. I thought for sure I was going to have a heart attack. At one point my hands were sweating/shaking, I was screaming and couldn’t watch the screen, my heart was racing… Yes. I am that girl. Haha. It’s been quite the fight all season long and I am so proud of my team. I would like to point out our defense was on their A game tonight and do NOT deserve being ranked last in the NFL. We have been all over our sacks, man to man coverage, and over all beasting it out there. 🙂 Here’s some victory photos for you all and I apologize to all my readers who hate the Patriots and want to never visit my blog again. 😉

Now I’m off to watch the 49ers v. Giants!!! I’m rooting for the 49ers obviously haha. 🙂 However, a redemption Super Bowl doesn’t sound all that bad either.

Anyone else watch the game? We’re you as affected as I was? It’s okay if you think I am a nut… You’re probably right about that.

New Leg Superset!

Hi everyone!

So I haven’t had anything super exciting to share on the recipe front so today I decided to give you all a little workout! We all know I love my supersets, because they are fast and do the job. No one wants to spend hours in the gym if they don’t have to, right? This is my quick and dirty get the job done leg superset. If you plan on doing cardio on the same day with this I would most definitely start with the cardio since the goal is to get your legs pretty noodly feeling after this superset workout. 🙂 Enjoy! Quick and Dirty Leg Superset

Superset 1:
Leg press 3×15
Leg Curls 3×15
Superset 2:
Step Ups (With or without weights) 3×15
Hack Squat (Barbell behind the back) 3×10
Superset 3:
Barbell Squats 3×15
Walking Lunges 3×15
Last set (No Superset):
Dead Lifts 3×12

Super quick and you’ll feel it assuming you’re using challenging weights! I highly encourage doing so. More bang for your buck. 😉 Don’t forget to foam roll if you’re feeling super sore! I love me some foam rolling.

As always, check with a doctor before starting a new exercise routine. This one is for intermediate gym goers I would say. You can obviously take off some weights and make it easier if you are beginner! Also, if you have any question on what proper form for these exercises looks like please don’t hesitate to check out YouTube or Both have awesome video databases for exercises.

A new upper body one is in the works. I am also starting up an abs and core superset. So keep your eyes peeled!


Happy Thursday everyone!

So this morning I woke up feeling a tad better, thank goodness! No one likes being sick, but when you lose your voice, it just becomes annoying haha. So anyways, since I was feeling better and my Mom went to the store yesterday and bought some more bananas and waffles my favorite breakfast appeared today! 2 whole grain waffles, 2 tbsp of peanut butter, sliced banana, and some chia seeds!

A couple of hours later while watching the Burn Notice Marathon on TV I decided I wanted to try one of the new flavors of Chobani that I found at Wegman’s the other day! Blood Orange… Tastes like a creamsicle. It was seriously some good eats. Now onto lunch! Today I was craving some eggs… and cheese… and jelly… All together. Now I know this is not an original concept. It sounds completely off the wall to me too. I read about it a bunch in other blogs and it peaked my interest. So I toasted up a honey wheat sandwich thin, put some Stonwall Kitchen Concord Grape Jelly on one side, a slice of Sargento provolone and mozzarella twisted cheese on the other side and loaded it up with a healthy “fried” egg. 🙂 Man was it good! I was surprised! The combination of sweet and savory is my best friend now.

So now after lunch I am curled back up on the couch watching the WWE with my roommate. This is kind of an awkward admission, I must say. I grew up watching the WWF with my family so it’s been a normal thing in my life. I know a lot of people look at wrestling and think “what the heck is this crap?!” I understand haha. But it’s actually super entertaining, I think. I am well aware it is all a bunch of really bad acting, but something about it brings back fun memories and I just enjoy watching their fake drama play out. 🙂

Does anyone else watch the WWE? Or does everything think I am a huge nerd? Well, I am a huge nerd, but that’s besides the point. 😉 I also find this man to be incredibly good looking. My roommate and Mom agree.

Sunday Gravy… On a Wednesday

So as promised here is a recap of the dinner my roommate and I made with accompanying recipes. 🙂 Keep in mind that neither my roommate nor I are Italian… Not even close. So I am sorry to all the Italians out there who might shudder at what we considered an “Italian Gravy” or a “Caprese Salad” ;).

Italian Gravy (Compiled from various online recipes) Serves A LOT


  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 6 cloves garlic, chopped
  • 1 tablespoon Italian seasoning
  • 1 lb pork shoulder
  • 3 – 28 oz cans crushed tomatoes
  • 1 small handful fresh basil
  • 3/4 cup grated parmesan cheese

Heat olive oil in pot and cooked onions, garlic, and Italian seasoning until onions are tender. Remove onion mixture from pot and place in separate bowl.

Add the pork to the same pot that the onions were cooked in, and brown through. Once the meat is cooked, add in crushed tomatoes and basil. Cook for about an hour. Then add in parmesan cheese and simmer for an additional hour and a half. The meat should fall apart in the sauce as you stir it. Add salt and pepper to taste.

We also added meatballs to the sauce! This recipe is 100% from Sweet Tooth Sweet Life, which is a blog everyone should check out because Courtney is pretty awesome. I read her blog like every day haha. Here’s the link to her post about her Mom’s meatballs and sauce.

We decided to have our sauce over some linguine, but if you want to keep it healthier you could put it over some spaghetti squash which is amazing. I like sauce over broccoli too! For the meatballs you could opt for a less fatty hamburg or use turkey or chicken. I decided to indulge a little bit since we are still on vacation and used to real stuff, but trust me I would definitely make this in the future with spaghetti squash, since that stuff is fantastic.

Caprese Salad (Serves 5 or 3 really hungry people waiting for the sauce to cook)

4 Roma Tomatoes
1 small pouch of fresh mozzarella cheese
A little fresh basil
Drizzle of Balsamic Vinaigrette (We just combined EVOO, minced garlic, and Balsamic Vinegar!)

Slice up the tomatoes into round disks, chop the the basil and mozzarella. Layer the cheese and the basil on top of the tomato slices and drizzle with a little balsamic vinaigrette. You can place this combo on top of crispy Italian bread or crackers. Enjoy!

I hope you guys enjoy these recipes! Remember, everything in moderation. I know I may receive some flack for this but I am a big believer in a healthy lifestyle and healthy eating. With that being said I do like to indulge every once in a while, but I would never eat like this every day. I eat healthy 90% of the time, but I do like to share with you guys some recipes that I think stand out. These were both really good to me and I thought maybe you guys would want to try them. I gave you options to lighten things up a bit and I hope you guys try it and let me know what you think!

*This is a quick addition to this post. The day after I made this I decided to put it in Myfitnesspal and see how many calories everything was and I was actually pleasantly surprised. It’s not totally that bad for you. For the sauce, if you say it serves 20 people, which it does easily, is 116 calories give or take. The meatballs if you say serves 20, each person getting 1 meatball, is 67 calories. While on the higher side for sauce and meatballs it’s still not that bad for a calorie counting diet like the one that I am on. I just wanted to add this little quip in because I thought you would all be pleasantly surprised as well. The meat may be a little on the fattier side than the lean side but with less than an ounce of meat per person you aren’t actually consuming a bad amount at all. 🙂 Now I really hope you all try these out and enjoy them!

Sick as a Dog

Hey guys!

So guess who’s super duper sick?! This kid! I guess this weekend got the best of me. So this week has been dedicated to me trying to get better. Currently I am losing my voice, have a super bad headache, and my entire body aches. It feels like I had an intense gym workout… Without actually going to the gym haha. So anyways, another lazy day is up on the docket for today. I will be spending lots of time on this couch.

However, I did manage to catch up on this season of the Bachelor! What the heck is going on this season? There is so much drama and cattiness it’s ridiculous! I cannot believe how much these girls enjoy tearing each other down. Not really my cup of tea. Does anyone think this season seems a little forced in the drama department, however? I just feel like there is something going on where they are staging fights and issues between the girls. I’m not sure, maybe I’m the only one who thinks that, but it’s whack-a-doodle.

Moving on to the healthy eats of today. This morning I woke up just wanting some comfort good so I made another batch of the healthy french toast I made earlier this week and had a clementine on the side in order to get that extra punch of vitamin C to help me feel better.

I’m on my like 10000000000000th glass of water today hahaha. I’m hoping to flush out my system before this last weekend before school hits. 😉 Then it’s back to the seriousness of my last semester of college. Wahoo! However, I am a little nervous to graduate, obviously. It’s hard graduating not knowing what you really want to do and where the rest of life can take you. I was always used to having a plan and when I finally wasn’t happy with my plan anymore I got a little nervous to think about what is going to happen now that I don’t. The good news is I have decided to take a personal training and fitness nutrition course over the summer from NASM when I graduate hoping that I can do something I enjoy for a while trying to figure some things out. 🙂

Moving on to more food for lunchtime. I made myself a healthy little stir fry with soba noodles, red and green bell peppers, and some steamed broccoli. The sauce was the standard healthy mix of lemon juice and soy sauce. That’s all you need! Normally I use chicken in there too, but we didn’t seem to have any in the house so it was all vegetables for lunch today. This is unfortunate since I got hungry about an hour or so later and ended up eating a bagel with lite cream cheese and grape jelly haha.

As much as I love being here I am also kind of excited to get back to a normal routine of working out and eating healthy. I try my best here, but sometimes I just get too lazy and go for the most convenient things in this house. Hence why I don’t keep any of that stuff around my apartment or the temptation would be too great all the time. 😉

Tonight for dinner my roommate and I planned a big Italian dinner with gravy some linguine and caprese salad. I am really excited for it! I will post pictures and recipes soon!!!

Hand over the Jar

Good Morning everyone! Or should I say afternoon haha. I’m actually coming down with quite a head cold while I am here in PA… It’s just no fun. I am losing my voice, which makes me sound like a five year old little boy. So adorable, I know.

When I woke up this morning my head felt like a brick and my throat hurt so much that even thinking about going to the gym made me tired, so instead my roommate and I made a healthy and filling brekkie!

Up on the menu for today’s meal was a yogurt bowl. =] I must take a moment to tell everyone about my love for Chobani yogurt. I feel like everyone ends up falling in love with one brand of Greek yogurt and never even looks at the other brands. Chobani is that brand for me. Their new apple cinnamon might be one of the best ideas a yogurt company has ever had. It’s a new flavor so keep an eye out for it at your local grocery store. Put some granola in that bad boy and you guys have yourself a healthy apple crisp. It’s delicious. Anyways, like most mornings I was craving some Chobani so I used about 8 oz of Vanilla Chobani with about 2 tbsp of organic peanut butter and 1/3 cup of Kind Oats and Honey Clusters. It was delicious. I ate it around 11 and I am still not hungry around 1. I consider that a breakfast of champions, my friends. Also, in keeping with my Chobani shout out I have to tell you guys that they are an amazing company that really gives back to their fans. I was tweeting about what I eat, because I am on the Tone It Up diet plan and we all do check ins. But because I tweeted them so much they ended up sending me like 5 coupons of money off Chobanis. I was like OMG! BROKE COLLEGE STUDENTS DREAM! Hahaha, so I just wanted to say thank you to them cause they’re awesome. And no, no one paid me to say that. Payment is not necessary when I rave about foods I love. 😛

Wow that looks kind of gross... But it was delicious. 😉

Up next for my day is to return some of the stuff I bought the other day due to the fact that I am more broke than I originally thought. I am keeping some stuff, but the rest my friends needs to go back! However, I am all over those $10 Nike shorts. Those bad boys aren’t going anywhere.
