Happy Saturday! I have a ton to do today so I am going to keep this post pretty short. My Mom is in town for the weekend and my friend Ben is home for the weekend from UVM so I want to go meet up with them ASAP. Hopefully I can snag some pictures tonight since we are all having dinner at my apartment. Garlic shrimp with quinoa for my Mom and I and Ben is bringing his own food since he’s not exactly a healthy eater. 😉
Let’s start with last night’s dinner. Holy cow this may be the best Italian Quinoa Bowl on the fly that I have ever made. I started by prepping 1/4 cup of quinoa and while that cooked I sauteed half of a red bell pepper, half of an orange bell pepper, some diced red onion in olive oil. Then after they got a little softer I added in some chicken breast and let that cook up for a bit. I then added minced garlic, let that brown before adding some organic tomato sauce and Italian Garlic Gold. Super good sauce I must say. I also steamed some broccoli to add some greens to the mix. I then of course dumped a truck load of nutritional yeast on top and had a foodgasm. 😉
This morning I started off my day right with a chocolate chip protein pancake topped with sliced strawberries. On the side I had my usual Bombshell Spell, which I am actually starting to love. The burn of the vinegar is starting to not phase me anymore.
I also have a recipe I want to share with you for a smoothie. I was asked about it a little while ago on Twitter and told someone it would be up and it slipped my mind. Don’t worry! I remembered, finally. 🙂
Banana Almond Smoothie
1 cup unsweetened almond milk
1 frozen banana
1 tbsp peanut butter or almond butter
1 tbsp ground flax
1 tbsp PB2 (optional)
Blend up and enjoy!
