So I am writing this post at 1 am because I can’t sleep haha. I have some serious problems. I am not sure if it’s because I have to move all the big furniture, minus my bed, out of my apartment at 9 am, but I seriously cannot sleep. I’ve also been brainstorming for the past hour on how to blog on Martha’s Vineyard since I am seriously depressed about not being able to do it. It’s been really hard for me to not write a post daily like I used to. This whole weening myself off of blogging is torture! Especially when I am reading other blogs and seeing all the fun fitness blogging retreats they are going to… Serious killer!
I will tell you all about my moving adventures tomorrow when I actually start moving some of this crazy stuff, so for now I am going to talk about food! I have an awesome recipe in store for you guys so stick with me. 🙂
Holy cow do I have a killer breakfast for you! And this isn’t even the recipe part of this post. I combined plain Greek yogurt with some homemade honey cinnamon peanut butter (using 2 tbsp PB2, a little almond coconut milk, a little honey, and some cinnamon idea courtesy of Courtney from Sweet Tooth Sweet Life), and some stevia. Then I made some Carob Chip Baked Oatmeal the night before to crumble on top of it! I topped it off with a sprinkle of coconut and I was in heaven. This breakfast filled me up for hours. It was so good. I am thinking I might split the baked oatmeal in half for this breakfast and use it for two days since it was that filling! 🙂 I made this two days in a row. You should all try it sometime. And of course I had a bombshell spell on the side! So good! I might experiment with new flavors soon. I am thinking different juices would totally work out.
I found something new at the grocery store while I was there the other day. I normally don’t do “snack” type foods because I find that I tend to overeat them. But these were a small enough package I thought why not?! The ingredient list was awesome and just 100% freeze dried fuji apples! They tasted like a better and healthy green apple jolly rancher. They were so good. If you see these in the store and like apples try them out! They are super fun. Low in sugar too!
I have been having the same lunch like every single day. I know I am so boring. Chicken seasoned with sea salt, pepper, and paprika cooked in coconut oil. Then put on a collard wrap with Sabra Spinach and Artichoke Hummus (my new favorite), and grape tomatoes. Surprisingly I may be getting slightly bored of this combination, so this may be the last time you see it for a while… That is if I can still blog in the semi-near future. 😦
Oooh I am so excited about this meal too! I apparently have been making a lot of new things lately. Something I think none of you will mind since you are probably sick of seeing the same stuff every single post. I made Strawberry Raspberry Chia Jam, inspired by Eat Bird Food and PowerCakes, put that on top of a protein pancake, sliced banana, and coconut. Holy cow guys! That jam is seriously good! I polished it off just eating it by itself as a snack. It was legit one of the best jams I have ever had. And most definitely one of the healthiest!
Here is the exciting recipe portion of my post! I have been craving quesadillas a lot lately, but since I am trying to be a little bit more strict with my diet and trying to limit my cheating to once a week max, I decided to put a spin on it to make it healthier. It was the best decision I ever made! I found this new vegan cheese in the grocery store made by Daiya. I got the mozzarella cheese shreds. It tastes like parmesan cheese and mozzarella cheese had a baby… And it was a healthy baby. This cheese is seriously the bomb dot com people. And it’s way better for you than the dairy version. Especially if you don’t eat a lot of dairy, like myself.
1/4 cup cooked quinoa
4 oz chicken breast (seasoned with paprika, chili powder, sea salt, and pepper)
1/2 diced each of red bell pepper and orange bell pepper
1/4 cup diced red onions
1/4 cup black beans (drained no salt added)
1/4 cup fresh salsa
1/4 cup Daiya Mozzarella Cheese
Cook quinoa according to packaged instructions (1/4 cup quinoa cooked in 3/4 cup water if you buy in bulk!) Then in a separate saute pan, melt a little coconut oil and saute the bell peppers and onion with some chili powder, paprika, sea salt and pepper. Cook for about 3-5 minutes until it starts to get tender. Add in the chopped chicken and cook all the way through, then add black beans just to warm them up. Top the chicken mixture on top of the quinoa in a bowl. Add salsa and cheese on top! ENJOY!
Seriously, this tasted like an amazing little Mexican treat. I’ve had it two nights in a row because it’s so good! I cannot get enough of it. I hope you all love it! Eat the rainbow in veggies ladies and gents, you won’t regret it!
Dessert times Two!
So for dessert I had a frozen banana blended with a little almond coconut milk and pb2. It was so good. I added carob chips and coconut on top for an extra little love in the bowl. I also decided to make German Chocolate Fudge Babies from Chocolate Covered Katie’s Blog. You all need to try this ASAP! They taste just like little brownie bites, only they are way healthier and have a ton of good fats and fiber. I ate 4… Woopsies. I was really hungry apparently. That, and they were just that good. Note to self, buy more dates and make way more fudge babies.
Quick random note, look at how much faster I am getting on my half marathon training. Well technically it’s 5k training now in hopes of running a half haha. But seriously I am getting so much stronger. I love it!
Sorry for the ridiculously long post guys! More on moving tomorrow. I am going to try to update as much as possible before I leave.
