Mockadillas

So I am writing this post at 1 am because I can’t sleep haha. I have some serious problems. I am not sure if it’s because I have to move all the big furniture, minus my bed, out of my apartment at 9 am, but I seriously cannot sleep. I’ve also been brainstorming for the past hour on how to blog on Martha’s Vineyard since I am seriously depressed about not being able to do it. It’s been really hard for me to not write a post daily like I used to. This whole weening myself off of blogging is torture! Especially when I am reading other blogs and seeing all the fun fitness blogging retreats they are going to… Serious killer!

I will tell you all about my moving adventures tomorrow when I actually start moving some of this crazy stuff, so for now I am going to talk about food! I have an awesome recipe in store for you guys so stick with me. ๐Ÿ™‚

Breakfast

Holy cow do I have a killer breakfast for you! And this isn’t even the recipe part of this post. I combined plain Greek yogurt with some homemade honey cinnamon peanut butter (using 2 tbsp PB2, a little almond coconut milk, a little honey, and some cinnamon idea courtesy of Courtney from Sweet Tooth Sweet Life), and some stevia. Then I made some Carob Chip Baked Oatmeal the night before to crumble on top of it! I topped it off with a sprinkle of coconut and I was in heaven. This breakfast filled me up for hours. It was so good. I am thinking I might split the baked oatmeal in half for this breakfast and use it for two days since it was that filling! ๐Ÿ™‚ I made this two days in a row. You should all try it sometime. And of course I had a bombshell spell on the side! So good! I might experiment with new flavors soon. I am thinking different juices would totally work out.

Mid-Morning Munch

I found something new at the grocery store while I was there the other day. I normally don’t do “snack” type foods because I find that I tend to overeat them. But these were a small enough package I thought why not?! The ingredient list was awesome and just 100% freeze dried fuji apples! They tasted like a better and healthy green apple jolly rancher. They were so good. If you see these in the store and like apples try them out! They are super fun. Low in sugar too!

Lunch

I have been having the same lunch like every single day. I know I am so boring. Chicken seasoned with sea salt, pepper, and paprika cooked in coconut oil. Then put on a collard wrap with Sabra Spinach and Artichoke Hummus (my new favorite), and grape tomatoes. Surprisingly I may be getting slightly bored of this combination, so this may be the last time you see it for a while… That is if I can still blog in the semi-near future. ๐Ÿ˜ฆ

Afternoon Snacky

Oooh I am so excited about this meal too! I apparently have been making a lot of new things lately. Something I think none of you will mind since you are probably sick of seeing the same stuff every single post. I made Strawberry Raspberry Chia Jam, inspired by Eat Bird Food and PowerCakes, put that on top of a protein pancake, sliced banana, and coconut. Holy cow guys! That jam is seriously good! I polished it off just eating it by itself as a snack. It was legit one of the best jams I have ever had. And most definitely one of the healthiest!

Dinner

Here is the exciting recipe portion of my post! I have been craving quesadillas a lot lately, but since I am trying to be a little bit more strict with my diet and trying to limit my cheating to once a week max, I decided to put a spin on it to make it healthier. It was the best decision I ever made! I found this new vegan cheese in the grocery store made by Daiya. I got the mozzarella cheese shreds. It tastes like parmesan cheese and mozzarella cheese had a baby… And it was a healthy baby. This cheese is seriously the bomb dot com people. And it’s way better for you than the dairy version. Especially if you don’t eat a lot of dairy, like myself.

Mockadilla
Serves 1

Ingredients
1/4 cup cooked quinoa
4 oz chicken breast (seasoned with paprika, chili powder, sea salt, and pepper)
1/2 diced each of red bell pepper and orange bell pepper
1/4 cup diced red onions
1/4 cup black beans (drained no salt added)
1/4 cup fresh salsa
1/4 cup Daiya Mozzarella Cheese

Directions
Cook quinoa according to packaged instructions (1/4 cup quinoa cooked in 3/4 cup water if you buy in bulk!) Then in a separate saute pan, melt a little coconut oil and saute the bell peppers and onion with some chili powder, paprika, sea salt and pepper. Cook for about 3-5 minutes until it starts to get tender. Add in the chopped chicken and cook all the way through, then add black beans just to warm them up. Top the chicken mixture on top of the quinoa in a bowl. Add salsa and cheese on top! ENJOY!

Seriously, this tasted like an amazing little Mexican treat. I’ve had it two nights in a row because it’s so good! I cannot get enough of it. I hope you all love it! Eat the rainbow in veggies ladies and gents, you won’t regret it!

Dessert times Two!

So for dessert I had a frozen banana blended with a little almond coconut milk and pb2. It was so good. I added carob chips and coconut on top for an extra little love in the bowl. I also decided to make German Chocolate Fudge Babies from Chocolate Covered Katie’s Blog. You all need to try this ASAP! They taste just like little brownie bites, only they are way healthier and have a ton of good fats and fiber. I ate 4… Woopsies. I was really hungry apparently. That, and they were just that good. Note to self, buy more dates and make way more fudge babies.

They look like poop, but taste amazing! I promise you if you like chocolate you will instantly become obsessed with these.

Quick random note, look at how much faster I am getting on my half marathon training. Well technically it’s 5k training now in hopes of running a half haha. But seriously I am getting so much stronger. I love it!

Sorry for the ridiculously long post guys! More on moving tomorrow. I am going to try to update as much as possible before I leave. Sexy Legs Routine

Happy Humps day! You all know how much I love working my booty, so I have an awesome routine coming your way in a minute. ๐Ÿ™‚ It’s a killer leg workout. Seriously… Killer. I may or may not be able to walk tomorrow. If I can, I may deem myself a failure… Just kidding! I started off my morning with part one of the two part leg day. I know, crazy. But this is an awesome workout released from the Tone It Up ladies. It looks really simple, but those three moves done three times kicked my butt! And there weren’t even any weights!

But before we get into part deux, let’s start with some food since you all haven’t seen any food from me in a while. Guess what’s back?! Oatmeal! Did you miss it? No? Oops, I did.

Breakfast

This morning I started off with some mixed berry oatmeal/oat bran. After that was finished cooking I added some wheat germ, ground flax seed, a splash of almond coconut milk, some coconut and chia seeds on top of the berries. It was seriously good. I have missed oatmeal way more than the average person. I also had my bombshell spell on the side to aid in digestion and kick start my metabolism before my workout. Everyone should try drinking some apple cider vinegar, tons of health benefits! I promise it tastes good when diluted with juice. ๐Ÿ™‚ No sugar added!

Mid-Morning Munch

This morning I had some stuff to do before I could hit the gym so I ended up having my snack before I left. I had a banana split! The healthy way. I am such a rebel. I just split the banana, added some Greek yogurt, strawberries, carob chips, and coconut. I don’t think Tone It Up will mind me sharing that recipe since it’s nothing complicated and you could have figured it out from the picture.

While at the gym I completed this sexy legs workout and did a 30 minute HIIT from Self Magazine’s Drop 10 Challenge to round out my workout.

Jiggle Sizzler

This is a HIIT from the Self Drop 10 Challenge. You start off warming up for 5 minutes, then Sprint at a level 8 for yourself, hard but not impossible for 3 minutes. Then recover at a level 3 for 2 minutes. Repeat for 5 rounds, then cool down for 5 minutes. It’s a killer, especially after that leg workout!

Lunch

When I came back from the gym all sweaty and disgusting, I had a Chocolate Zico and a chicken, spinach and artichoke hummus, and tomato collard wrap. ๐Ÿ™‚ Delicious!

Mid-Afternoon Snack

So I got really hungry again like an hour later, I blame the legs workout for making me ravenous. So I had a chocolate chip protein pancake, topped with maranatha organic peanut butter, sliced banana, chia seeds, and coconut. I consider this fuel for the take home final I am seriously procrastinating on doing right now. Woopsies!

I guess that means it’s time to go start my final. Gosh I was hoping I could drag this post out longer. But for all of your sakes, I will stop. ๐Ÿ™‚ Wish me luck on these finals!

Why I Stopped Counting Calories

Happy Tuesday! We are getting closer and closer to graduation over here on my end! I have one take home final I need to start tonight, a paper, and one more final after that! Then I am officially a college grad making my way into the real world. Scary place, eh? ๐Ÿ˜‰ Anyways, I have a vlog for you guys today about why I stopped counting calories. This is a recent decision of mine and I wanted to share with you all why I did it even when counting calories does work. ๐Ÿ™‚ Now I am being mindful of my caloric intake I am just not searching every food and writing down every calorie that makes its way to my mouth.

If you have any questions let me know! Love you all! I wish I had some fun things going on in my life to share with all of you but with finals I am a pretty boring character recently. However, I did see the Avengers last night and it was awesome! I loved the one liners and relationships that formed in the movie. Plus, the action was kick butt and always on, which I love.

Why I Do This

Hi everyone! Sorry I have been missing lately, I am trying to ween myself off of blogging since I won’t have internet for the entire summer and I am not sure how I am going to update this. ๐Ÿ˜ฆ I am really sad about potentially having to take a break from this. It’s actually mildly breaking my heart. I promise this blog will remain up for anyone who wants the recipes or workouts. But unfortunately new posts may be scarce and far and few in between. I do however have a bunch of fun things coming up over the next year so you will see a little action. I will be all over twitter still this summer because I have an iPhone so I keep an eye for when there are posts.

Moving on to what this post is actually about on Motivation Monday. I found myself losing motivation lately and starting to go back to cheating. I realized it was because I was no longer focusing on losing the weight for myself. I was focusing on what other people thought, what I thought would be most attractive, and how my clothes fit. Those things will come, but I had to realize that I have to do this for me again. I need to do this for my health again. The weight is going to come off, I just have to remain dedicated and committed. I need to stop talking about it and just do it! So, here’s my vlog about all my thoughts and ideas. WIAW #8

Happy Humps day! Do something amazing for your booty today! I recommend squats, lunges, and deadlifts. I am a bit old fashioned like that. Welcome to my favorite posts of the week. However, you guys have been kind of seeing what I ate every single day lately to keep me in check. I did however have a couple cheats recently due to a certain present mother nature has decided to leave me with. This has caused some massive chocolate and ice cream cravings. Hello coldstone and a ton of handfuls of chocolate chips. Someone isn’t losing weight this week. ๐Ÿ˜ฆ Happens to the best of us females, however. I am still trying to keep it mostly in check! I apologize in advance for all of the weird lighting in my pictures. It was super rainy out yesterday so I had to make do with the lighting from my apartment or it would have been like pitch black!

Breakfast

I started off my day with an amazing protein pancake concoction. I started off with the usual base of the Tone It Up slim down pancake minus the blueberries. I topped it off with some sliced strawberries, the rest of the banana, and shredded unsweetened coconut. It was pretty epic, maybe one of the best I have ever made. I also can’t forget the Bombshell Spell on the side. ๐Ÿ™‚ I am really starting to love that little drink. I can’t seem to start my mornings without it anymore.

Mid-Morning Munch

I was feeling chocolate… Shocking. So I made another banana split from the Beach Babe edition. I am obsessed with this! It’s so stinkin’ good I want to just bathe in it. The carob chips just hit the spot today. Plus, I’m not sure when strawberry season is, but my strawberries are soooooo good! They are like the perfect ripeness and it’s taking all my self control to not eat the pint in the corner like a creep… ๐Ÿ˜‰ I added shredded coconut on top… Clearly I have another obsession developing. Welcome to summer, people!

Lunch

Oh man do I have a lunch for you guys! I had a chicken caprese noodle bowl. Yup, you read that correctly. Yes, it was all clean. Yes, it was delicious. And no, it didn’t consume all my calories for the day. Chocolate did that trick! I combined a quarter cup of Eden’s Organic Kamut and Quinoa pasta twists with sauteed chicken, wilted spinach and basil, grape tomatoes, 1/2 tbsp of extra virgin olive oil, and 1 tbsp of balsamic vinegar. I topped it off with just a little pinch of shredded parmesan cheese. It was delicious, holy cow! I highly recommend it if you are ever having a caprese craving… I may be the only person in the world who gets those.

Pre-Workout Snack

Yup, I had multiple snacks today. I had the appetite of a grizzly bear and cravings I could not control. I swear, typing this up is making me realize that I cannot cheat at all for the rest of the week. Unless I want to feel like a stuffed sausage. I made a protein pancake and split it in half with my roommate topping mine with a serving of pb2 and almond milk melted with chocolate and peanut butter chips… Oh yeah… And shredded coconut. I can’t get enough! It was foodgasmic. Unfortunately, it photographs like poop. I know I describe my food in the best way possible making you obviously want to try it!

Workout

I figured I would pause briefly to tell you about my workout. I did our normal Push Workout and I ran 2.5 miles in 30 minutes following week 4, day 1 of the couch to 5k app! It’s going awesome, guys. I really love this app. It’s starting to become rather challenging for me! I was sweating like a beast!

Post-Workout Smoothie

I had another crack berry smoothie bowl topped with shredded coconut. Get off me I basically ate a thousand coconuts today. ๐Ÿ˜‰

Dinner

For dinner I finished up the remaining Thin & Trim Wild Buffalo Chicken Sausages I had sitting in my refrigerator. I have an unhealthy love for chicken sausages. There are three on this plate. I seriously stuff face when they are in sight. I can’t help it… THEY ARE SO GOOD! Gosh I could just go on about them. I eat them cold while waiting for them to warm up on the stove. I am disgusting like that. ๐Ÿ˜‰ I topped these particular sausages with organic tomato sauce, garlic, broccoli, and a truck load of nutritional yeast. Get in mah belly!

That’s my WIAW post! It makes me want to eat all of those foods all over again. I actually may eat the computer as I am typing this. There were so many delicious eats yesterday! I love Tuesdays, they give me a chance to relax at home and procrastinate by spending hours at the gym… and in my kitchen… eating chocolate chips… I mean doing all the homework I am supposed to do on time because I am a studious college student. Yeah right! I graduate in like two weeks my focus level and motivation level is at an all time low.
